Ingredients
- 1 pint brown sugar
- 1 pint bourbon
- 1 can tomato juice (46 oz.)
- 1 cup diced bell peppers (red, green, yellow, orange or any combination of each)
- 1 cup diced onions
- 1 jar tamarind paste (8oz)
- 1 jar Pickapeppa Hot Sauce (5oz)
- 3-4 strips of cooked bacon
- Salt & pepper to taste
Steps
- Reduce sugar and bourbon until syrup
- Reduce tomato juice separately until sauce consistency (similar to ketchup)
- While liquids are reducing, sauté peppers and onions until nice caramelization forms and set aside
- Combine syrup, reduced tomato, onions, peppers, and bacon and simmer on low for 10 minutes
- Add tamarind, Pickapeppa, and simmer for 5 another minutes
- Season with salt & pepper and strain through wire strainer
- Serve with favorite BBQ chicken, pork or beef dish.
